The centrepiece of San Telmo is the traditional Argentinian Parrilla charcoal grill, the anchor of the entire dining experience.
Built for live fire cooking, it draws together charcoal, smoke, and intense open heat to bring depth, flavour, and character to every dish. More than just a method of cooking in Argentina, the Parrilla is a gathering point; where food is cooked slowly, shared generously, and served with respect for the ingredient.
It sits fully on display in our open kitchen, bringing the rhythm of the grill into the room itself. Diners can pull up a bar stool overlooking the kitchen, allowing them to get right up close to the action. From slow-rendered cuts to precise, flame-kissed seafood and produce, almost everything moves through the fire.

The
History
WHERE THE SAN TELMO STORY BEGAN
Every San Telmo meal can be traced back to a table in Buenos Aires, where a group of friends thought of a plan: to bring the tastes and ethos of Argentina all the way to Melbourne.
And so San Telmo began, scribbled on a napkin over glasses of Malbec. The business plan came together on the 16 hour plane trip home, and in 2011, became San Telmo Melbourne.
Today, that same spirit lives on in both Melbourne and Brisbane.
